This easy Leftover Pasta Bake recipe is the perfect way to reuse last night’s pasta. With added cheese, olives, and breadcrumbs, it becomes a comforting and delicious dish that's quick to prepare and super satisfying.

- leftover spaghetti
- 60 g mozzarella
- 60 g cheddar
- 1 cup breadcrumbs
- 1/2 cup butter
- 5 tsp parmesan cheese
- olive oil
- fresh basil
- fresh thyme
- salt to taste
- black pepper to taste
- paprika to taste
In a pan melt butter until golden and foamy.
Add breadcrumbs and cook until toasted.
Season with salt and pepper to taste. Set aside.
Mix mozzarella and cheddar together. Set aside.
Using 5 baking moulds or ramekins, grease with olive oil.
Add about 1/2 tbsp of the cheese mix at the bottom.
Cover with the leftover pasta.
Top it all up with the remaining cheese dividing equally between portions.
Add a layer of breadcrumbs on top.
Sprinkle parmesan and paprika.
Finish with chopped olives and olive oil.
Bake in hot oven 180C | 356F for about 30 minutes or until cheese is bubbly and golden.
