For the Crunch
- 1/4 cup sugar
- 1 tbsp water
- mixed nuts (cashews, almonds, peanuts)
For the Butterscotch Sauce
- 1/2 cup sugar
- 1 tbsp water
- 4 tbsp butter
- 1/2 cup fresh cream
For the Cream
- 300 ml fresh chilled cream
For Assembly
- Sliced brioche bread (crust removed)
Make the Crunch
Add sugar and water to a pan and cook until caramel forms.
Add nuts and mix well.
Transfer to baking paper and let cool completely. Once hardened, crush into small pieces.
Make the Butterscotch Sauce
In a pan, cook sugar and water until caramelized.
Add butter and stir until melted.
Slowly add cream and mix until smooth.
Set aside to cool completely.
Assemble the Cups
Remove crust from bread and cut to fit cups.
Dip bread lightly in the butterscotch sauce.
Layer: Bread, Cream, Bread, Cream
Finish with crushed caramel nuts.
Refrigerate for 1 hour before serving
