Ingredients
  

For the Crunch

  • 1/4 cup sugar
  • 1 tbsp water
  • mixed nuts (cashews, almonds, peanuts)

For the Butterscotch Sauce

  • 1/2 cup sugar
  • 1 tbsp water
  • 4 tbsp butter
  • 1/2 cup fresh cream

For the Cream

  • 300 ml fresh chilled cream

For Assembly

  • Sliced brioche bread (crust removed)

Instructions
 

Make the Crunch

  • Add sugar and water to a pan and cook until caramel forms.
  • Add nuts and mix well.
  • Transfer to baking paper and let cool completely. Once hardened, crush into small pieces.

Make the Butterscotch Sauce

  • In a pan, cook sugar and water until caramelized.
  • Add butter and stir until melted.
  • Slowly add cream and mix until smooth.
  • Set aside to cool completely.

Prepare the Cream

  • Whip the fresh cream until firm peaks form.
  • Fold in 3–4 tablespoons of butterscotch sauce (add more for stronger flavor).

Assemble the Cups

  • Remove crust from bread and cut to fit cups.
  • Dip bread lightly in the butterscotch sauce.
  • Layer: Bread, Cream, Bread, Cream
  • Finish with crushed caramel nuts.
  • Refrigerate for 1 hour before serving
