Ingredients
For the Crunch
- 1/4 cup sugar
- 1 tbsp water
- mixed nuts (cashews, almonds, peanuts)
For the Butterscotch Sauce
- 1/2 cup sugar
- 1 tbsp water
- 4 tbsp butter
- 1/2 cup fresh cream
For the Cream
- 300 ml fresh chilled cream
For Assembly
- Sliced brioche bread (crust removed)
Instructions
Make the Crunch
- Add sugar and water to a pan and cook until caramel forms.
- Add nuts and mix well.
- Transfer to baking paper and let cool completely. Once hardened, crush into small pieces.
Make the Butterscotch Sauce
- In a pan, cook sugar and water until caramelized.
- Add butter and stir until melted.
- Slowly add cream and mix until smooth.
- Set aside to cool completely.
Prepare the Cream
- Whip the fresh cream until firm peaks form.
- Fold in 3–4 tablespoons of butterscotch sauce (add more for stronger flavor).
Assemble the Cups
- Remove crust from bread and cut to fit cups.
- Dip bread lightly in the butterscotch sauce.
- Layer: Bread, Cream, Bread, Cream
- Finish with crushed caramel nuts.
- Refrigerate for 1 hour before serving
