Dough
- 2 egg yolks
- 50 g sugar
- 100 g butter
- 1/2 tsp vanilla extract
- zest of one lemon
- pinch of salt
- 150 g flour
- 1 tsp baking powder
Filling
- 2 egg whites
- 75 g sugar
- 200 g natural yogurt
- 200 g buttermilk
- 1/2 tsp vanilla
- 4 tbsp semolina
Make the Dough
Beat egg yolks with sugar until creamy.
Add butter and mix until smooth.
Add vanilla, lemon zest, and salt.
Mix in flour and baking powder until dough forms.
Divide in two, wrap, and chill for 1 hour
Prepare the Filling
Whip egg whites to stiff peaks.
Add sugar to form a meringue.
In another bowl, mix: Yogurt, Buttermilk, Vanilla, Semolina
Fold the meringue into the yogurt mixture.
