Ingredients
  

Dough

  • 2 egg yolks
  • 50 g sugar
  • 100 g butter
  • 1/2 tsp vanilla extract
  • zest of one lemon
  • pinch of salt
  • 150 g flour
  • 1 tsp baking powder

Filling

  • 2 egg whites
  • 75 g sugar
  • 200 g natural yogurt
  • 200 g buttermilk
  • 1/2 tsp vanilla
  • 4 tbsp semolina

Instructions
 

Make the Dough

  • Beat egg yolks with sugar until creamy.
  • Add butter and mix until smooth.
  • Add vanilla, lemon zest, and salt.
  • Mix in flour and baking powder until dough forms.
  • Divide in two, wrap, and chill for 1 hour

Prepare the Filling

  • Whip egg whites to stiff peaks.
  • Add sugar to form a meringue.
  • In another bowl, mix: Yogurt, Buttermilk, Vanilla, Semolina
  • Fold the meringue into the yogurt mixture.

Assemble

  • Line a baking pan.
  • Press half the dough into the base.
  • Add the filling.
  • Grate the remaining dough over the top.

Bake

  • Bake at 180°C | 356F for 30 minutes.
  • Increase heat at the end to lightly brown the top.

Chill

  • Let cool, then refrigerate before serving.
