Brazo de Mercedes: Easy Filipino Chilled Dessert with Condensed Milk

1 Large tray 30x50cm

Meringue
- 10 egg white
- 1 cup sugar
- 1 tsp cream of tartar
- confectionary sugar
- oil
Filling
- 10 egg yolks
- 1 can condensed milk
- 1 tsp vanilla extract
- 1 tsp lemon rind
Meringue
Using two large bowls, separate the egg yolks from the whites.
Add the cream of tartare to the egg whites.
With a hand mixer beat the whites until it firms up and then gradually add the sugar.
Keep beating until nice and glossy.
Line a large tray 30x50cm with baking paper and brush it oil.
Transfer the meringue and smooth it out into a nice even layer.
Using a fork score the surface of the meringue.
Bake at 170C | 338F for about 20 minutes.
Once baked set aside to cool.
Assembly
Generously sprinkle the meringue with powdered sugar.
Place a layer of baking paper on top and flip it over.
Layer it with the yolk mixture leaving about 2 fingers from the edge.
Carefully roll into a log.
Slice and serve.
