Authentic Easy Pad Thai Recipe | Quick Thai Noodles with Chicken and Tofu

Equipment

  • 1 Mixing bowl
  • 1 Wok or frypan

Ingredients
  

For the noodles

  • 500 g rice noodle
  • 3 tbsp vegetable oil
  • 3 garlic cloves
  • 2 chicken breasts
  • 100 g tofu
  • 2 eggs
  • 1 cup bean sprouts
  • 1/2 bell pepper
  • 2 limes
  • 1/2 cup coriander
  • spring onion to taste

Sauce

  • 3 tbsp fish sauce
  • 1 tbsp soy sauce
  • 5 tbsp sugar
  • 2 tbsp rice vinegar
  • 1 tbsp Sriracha
  • 2 tbsp peanut butter

Instructions
 

  • Cook the noodles in boiling water until tender. Remove and set aside.
  • Mix all ingredients for the sauce and set aside.
  • slice the chicken breasts into thin strips.
  • chop tofu in half.
  • in the wok heat up the oil and fry the garlic until fragrant.
  • add bell pepper and tofu and fry for a minute.
  • add in the bean sprouts mix.
  • push all ingredients to the side of the wok.
  • add the eggs, fry and scramble.
  • add the noodles, cover with the reserved sauce and toss it to combine.
  • finish with coriander, peanuts.

serve with lime wedges, extra sugar peanuts and dry chilli on the side.
