Authentic Easy Pad Thai Recipe | Quick Thai Noodles with Chicken and Tofu

Equipment
- 1 Mixing bowl
- 1 Wok or frypan
Ingredients
For the noodles
- 500 g rice noodle
- 3 tbsp vegetable oil
- 3 garlic cloves
- 2 chicken breasts
- 100 g tofu
- 2 eggs
- 1 cup bean sprouts
- 1/2 bell pepper
- 2 limes
- 1/2 cup coriander
- spring onion to taste
Sauce
- 3 tbsp fish sauce
- 1 tbsp soy sauce
- 5 tbsp sugar
- 2 tbsp rice vinegar
- 1 tbsp Sriracha
- 2 tbsp peanut butter
Instructions
- Cook the noodles in boiling water until tender. Remove and set aside.
- Mix all ingredients for the sauce and set aside.
- slice the chicken breasts into thin strips.
- chop tofu in half.
- in the wok heat up the oil and fry the garlic until fragrant.
- add bell pepper and tofu and fry for a minute.
- add in the bean sprouts mix.
- push all ingredients to the side of the wok.
- add the eggs, fry and scramble.
- add the noodles, cover with the reserved sauce and toss it to combine.
- finish with coriander, peanuts.
