Today’s recipe is a very special and delicious treat — Brazo de Mercedes, a traditional Filipino dessert that’s soft, creamy, and chilled.
It features a delicate meringue rolled around a rich custard-like filling made with condensed milk, vanilla, and lemon zest. It’s super easy to make, visually stunning, and one of the best desserts I’ve ever tried.
Perfect for serving after dinner or on special occasions when you want something sweet, light, and unforgettable.

Brazo de Mercedes: Easy Filipino Chilled Dessert with Condensed Milk
Brazo de Mercedes is a light and sweet Filipino dessert made with meringue and a creamy condensed milk filling. This simple chilled treat looks elegant and tastes amazing!
Equipment
- 1 Hand Mixer
- 1 Large tray 30x50cm
- baking paper
Ingredients
Meringue
- 10 egg white
- 1 cup sugar
- 1 tsp cream of tartar
- confectionary sugar
- oil
Filling
- 10 egg yolks
- 1 can condensed milk
- 1 tsp vanilla extract
- 1 tsp lemon rind
Instructions
Meringue
- Using two large bowls, separate the egg yolks from the whites.
- Add the cream of tartare to the egg whites.
- With a hand mixer beat the whites until it firms up and then gradually add the sugar.
- Keep beating until nice and glossy.
- Line a large tray 30x50cm with baking paper and brush it oil.
- Transfer the meringue and smooth it out into a nice even layer.
- Using a fork score the surface of the meringue.
- Bake at 170C | 338F for about 20 minutes.
- Once baked set aside to cool.
Filling
- Add all ingredients to a bowl and cook in bain-marie until thickens
- Sett aside to cool down.
Assembly
- Generously sprinkle the meringue with powdered sugar.
- Place a layer of baking paper on top and flip it over.
- Layer it with the yolk mixture leaving about 2 fingers from the edge.
- Carefully roll into a log.
- Slice and serve.
