Brazo de Mercedes: Easy Filipino Chilled Dessert with Condensed Milk

Brazo de Mercedes is a light and sweet Filipino dessert made with meringue and a creamy condensed milk filling. This simple chilled treat looks elegant and tastes amazing!

Equipment

  • 1 Hand Mixer
  • 1 Large tray 30x50cm
  • baking paper

Ingredients
  

Meringue

  • 10 egg white
  • 1 cup sugar
  • 1 tsp cream of tartar
  • confectionary sugar
  • oil

Filling

  • 10 egg yolks
  • 1 can condensed milk
  • 1 tsp vanilla extract
  • 1 tsp lemon rind

Instructions
 

Meringue

  • Using two large bowls, separate the egg yolks from the whites.
  • Add the cream of tartare to the egg whites.
  • With a hand mixer beat the whites until it firms up and then gradually add the sugar.
  • Keep beating until nice and glossy.
  • Line a large tray 30x50cm with baking paper and brush it oil.
  • Transfer the meringue and smooth it out into a nice even layer.
  • Using a fork score the surface of the meringue.
  • Bake at 170C | 338F for about 20 minutes.
  • Once baked set aside to cool.

Filling

  • Add all ingredients to a bowl and cook in bain-marie until thickens
  • Sett aside to cool down.

Assembly

  • Generously sprinkle the meringue with powdered sugar.
  • Place a layer of baking paper on top and flip it over.
  • Layer it with the yolk mixture leaving about 2 fingers from the edge.
  • Carefully roll into a log.
  • Slice and serve.
