Easy Vegetarian Meatballs Recipe with Mushrooms – Simple and Delicious
This easy vegetarian meatballs recipe combines mushrooms, oats, parmesan, and herbs to create delicious, hearty meatballs. Perfect for healthy, satisfying meals!

- Food Processor optional
- Frying pan
Ingredients
- 300 g button mushroom
- 1/2 cup bread crumbs
- 1/4 cup oats
- 1/2 cup chopped onion
- 2 garlic cloves minced
- 1/4 cup parsley
- 1/2 tsp oregano
- 1/2 tsp dried rosemary
- 1/2 tsp tarragon
- 1 tbsp parmesan
- salt, black pepper and cayenne pepper to taste
- 1 egg
Instructions
- Add mushrooms to a food processor or chop into small pieces.
- Heat oil in frying pan and cook the mushrooms until most moisture has cooked through.
- Add onions and cook for a few minutes until soft.
- Add garlic and cook until fragrant.
- Remove from heat and transfer to a mixing bowl.
- Add all the remaining ingredients and mix well.
- Portion into 10 balls of about 2cm each.
- Place in a lined tray and bake for 20 minutes in hot oven at 190C / 374F.
