Easy Vegetarian Meatballs Recipe with Mushrooms – Simple and Delicious

This easy vegetarian meatballs recipe combines mushrooms, oats, parmesan, and herbs to create delicious, hearty meatballs. Perfect for healthy, satisfying meals!

  • Food Processor optional
  • Frying pan

Ingredients
  

  • 300 g button mushroom
  • 1/2 cup bread crumbs
  • 1/4 cup oats
  • 1/2 cup chopped onion
  • 2 garlic cloves minced
  • 1/4 cup parsley
  • 1/2 tsp oregano
  • 1/2 tsp dried rosemary
  • 1/2 tsp tarragon
  • 1 tbsp parmesan
  • salt, black pepper and cayenne pepper to taste
  • 1 egg

Instructions
 

  • Add mushrooms to a food processor or chop into small pieces.
  • Heat oil in frying pan and cook the mushrooms until most moisture has cooked through.
  • Add onions and cook for a few minutes until soft.
  • Add garlic and cook until fragrant.
  • Remove from heat and transfer to a mixing bowl.
  • Add all the remaining ingredients and mix well.
  • Portion into 10 balls of about 2cm each.
  • Place in a lined tray and bake for 20 minutes in hot oven at 190C / 374F.
