I used separated egg whites and yolks for extra fluffiness and a pressure cooker to “bake” the cake, giving it a beautiful, moist texture. It’s an easy dessert you can enjoy anytime.

Easy Pressure Cooker Sponge Cake – No Oven Needed!
This pressure cooker sponge cake is a quick and easy recipe —ideal for those who don’t have an oven or just want a fast and delicious dessert. Simple, fluffy, and ready in minutes!
Equipment
- 1 Pressure Cooker
- 1 hand held mixer
- 1 Heavy bottom pan
- 1 Whisk
- 1 Bowl
Ingredients
- 4 eggs
- 1 cup confectionary sugar
- 1 tsp vanilla
- 1/4 cup oil
- 1 cup flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 cup milk
Instructions
- Separate the egg yolk from the whites.
- In a mixing bowl beat the egg whites until soft peaks.
- Gradually add the sugar while beating.
- Once nice and glossy add the yolks and mix it.
- Add the oil and vanilla and mix.
- Combine flour, baking powder and baking soda.
- Sieve through into the egg mixture.
- With a whisk gently mix to combine.
- Add milk and mix again.
- Line the bottom of a pressure cooker with baking paper and coat with oil.
- Transfer the mixture and close the lid.
- To cook will be using a heavy bottom pan under the pressure cooker.
- Cook in the low setting for about 30-40 minutes.
- Remove from heat, release the pressure and remove the cake.
- Let it cool down before handling it.
