Easy Preserved Onion Recipe with Olives and Herbs
This quick and flavorful Brazilian marinated onion recipe (cebola em conserva) is the perfect side dish or appetizer to accompany any meal. Small roasted onions are blended with bold ingredients like garlic, olives, chilli, and fresh herbs, then preserved in a mix of olive oil, balsamic, and apple cider vinegar. The result is a zesty, savory treat with a beautiful texture and complex flavor — ideal for BBQs, tapas, or as a delicious antipasto.
Equipment
- 1 Glass jar with lid
Ingredients
- 14 Small Onions
- 1 tbsp Garlic Salt
- 1 tbsp Dried Basil
- 1 tbsp Oregano
- 1 tbsp Balsamic Vinegar
- 1 tbsp Apple Vinegar
- Olives
- 2 Garlic Clove
- Chilli
- 1 Spring of Fresh Thyme
- 1 Bay Leaf
- Olive Oil
Instructions
Baking the Onions
- Set oven to high
- Wrap onions in 2 layers of aluminium foil tightly.
- Bake for 1 hour.
- Once baked remove from heat and let it cool down.
Preparation
- Once onions are completely cool, remove from foil and peel.
- Slice off the root at the end.
- They should be soft and petals should be separating easily.
Combining
- In a jar with lid combine all ingredients
- Cover with olive oil.
- Mix everything.
