Easy Air Fryer Egg and Bacon Toast
This air fryer egg and bacon toast recipe brings the best of a hearty breakfast together—crispy bacon, creamy egg, fresh vegetables, and melty cheese on brioche bread, all done in under 20 minutes!
Equipment
- 1 Air fryer
- 3 ramekins
- 1 Rolling Pin
Ingredients
- 3 brioche slices
- 1 small onion
- 1 mushroom
- 1/8 bell pepper
- jalapeno to taste
- fresh mozzarella
- 3 eggs
- 3 slices of bacon
- butter
- chives or spring onions for garnishing
- salt and black pepper to taste
Instructions
- Start by removing the brioche crust.
- Using a rolling pin flatten each brioche slice.
- With a sharp knife make a cut from each corner to the centre of the bread, butt not all the way through to keep the slice still together.
- Finely chop onions, bell pepper, jalapeno, mushroom and set aside.
- Using a little bit of butter grease 3 ramekins.
- Place a slice of bacon covering the internal sides of the ramekins.
- Add the brioche slice to form a cup shape.
- Layer with half of the chopped ingredients and mozzarella.
- Crack an egg for each ramekin.
- Cover with the remaining ingredients and more mozzarella.
- Bake in the air fryer on medium high, until cheese is melted and eggs are cooked.
- Serve while hot.
